Instant Pot Berry Compote With Fresh Blueberries

Classic compote recipes include large amounts of white sugar, but this recipe for Instant Pot Berry Compote With Fresh Blueberries relies on a more modest amount of real maple syrup for a bit of sweetness. Although this recipe uses fresh blueberries, lemon juice, and cinnamon, feel free to add any combination of fresh berries, citrus juice, and seasonings to create your own tasty flavor variations.

Prep time: 5 minutes
Cook time: 13 minutes + time to come to pressure
Makes 3 cups

3 c. fresh blueberries
¼ c. maple syrup
2 T. lemon juice
1 t. vanilla extract
1 t. cinnamon
¼ t. salt

  • Add all compote ingredients to your Instant Pot and stir to combine. Lock the lid into position.
  • Make sure the pressure valve is set to the “Sealing” position and choose the “Manual” button. Adjust the pressure setting to high and set the cook time for 3 minutes.
  • When the cook time is up, immediately turn the Instant Pot off in order to prevent scorching. Do a natural release for 10 minutes, then do a manual release to release any remaining pressure.
  • For a thicker compote, choose the “Sauté” function and cook the compote over high heat, stirring frequently, until any excess liquid is reduced. Turn the Instant Pot off and remove the inner pot from the Instant Pot and let cool.
  • Store in the refrigerator in an airtight container for up to 10 days. Use over the Creamy Rice Pudding In The Instant Pot recipe, or serve it over French toast, pancakes, waffles, oatmeal, yogurt, cheesecake, ice cream, or pound cake. Enjoy!
