Crockpot Chili With Beef And Italian Sausage

This Crockpot Chili With Beef And Italian Sausage recipe chili gets a nice boost of flavor by using a combination of spicy or sweet pork sausage along with ground beef. Adding a cup of coffee gives the dish a deep umami flavor that sets this recipe apart from the average chili recipe.

Let it simmer all day and supper will be ready when you are. Serve it with crusty bread or tortilla chips.

Tip: Before browning the meat, crumble it with your fingers into the pan (much easier than trying to break up the chunks of meat while it’s cooking).


1 pound spicy or sweet pork sausage
1 pound lean ground beef
½ c. beef stock
4 garlic cloves
1 medium red onion
2 carrots
2 celery stalks
2 15.5-oz. cans kidney beans
2 15-oz. cans cannellini beans
1 28-oz. can diced tomatoes
1 6-oz. can tomato paste
2 28-oz. cans tomato puree
3 T. chili powder
1 T. ground cumin
1 t. cayenne pepper
2 t. dried oregano
1 c. prepared coffee
Salt and pepper


8 oz. shredded cheese (cheddar, or pepper jack if you like spicy)
Chopped green onions
Sliced jalapeno peppers
Sour cream
Diced avocado



  • Finely chop the garlic, onion, celery and carrots.
  • Drain and rinse the beans.
  • Add the pork sausage and ground beef to a large skillet and brown it over medium heat until no pink remains. Drain any excess fat and transfer the browned meat to your crockpot.
  • Place the skillet back on the burner on medium-high heat. Add the beef stock to the pan and deglaze it, scraping up any browned bits from the bottom of the pan.
  • Add the olive oil, onion and garlic to the pan and cook until onion is softened, about 3-4 minutes, stirring frequently. Add the carrot and celery and cook  for another 3 minutes. Remove the pan from the heat and add the contents of the skillet into the crockpot.
  • Add the cannellini beans, kidney beans beans, tomato paste, tomato puree, diced tomatoes with juice, cumin, chili powder, cayenne pepper and oregano to the crockpot. Add the black coffee and stir to combine everything.
  • Cook for 8 hours on low or 4 hours on high. Before serving, stir the chili and add salt and any other seasonings as needed.
  • Serve it with desired garnishes and bread or chips.
