Crockpot Beef And Broccoli

This simple but flavorful Crockpot Beef And Broccoli recipe can be thrown together quickly in the afternoon for a fast and easy meal.

Cook time: 3-7 hours
Serves: 4-6


1½ lbs. beef stew meat
1½ c. beef stock
3-4 finely minced cloves of garlic
½ c. low sodium or gluten-free soy sauce
2 T. toasted sesame oil
2 T. arrowroot powder
1 T. honey
Salt and pepper
1 14-oz. bag frozen broccoli florets
1 red bell pepper
3 c. cooked brown rice
1 T. toasted sesame seeds



  • Cut the stew meat into chunks and the bell peppers into short thin strips.
  • Add the beef stew chunks to a 5 or 6-quart crockpot.
  • Add the beef stock, soy sauce, minced garlic, honey, and sesame oil to a glass, plastic or other non-reactive bowl and whisk to thoroughly combine. Season with salt and pepper. Pour the mixture on top of the beef chunks. Cover the crockpot and cook on high for 3-4 hours or on low for 6-7 hours.
  • For a thicker sauce, combine 2 tablespoons of arrowroot powder with ¼ cup of the liquid from the crockpot.
  • Remove the lid from the crockpot and stir in the arrowroot slurry approximately 15-20 minutes before cooking is done, then add the sliced red bell pepper the frozen broccoli (add the veggies sooner if you want softer vegetables). Cover and finish cooking.
  • Serve the beef, vegetables and sauce over cooked brown rice and top with some toasted sesame seeds.
